Cherry Oatmeal

Ingredients:

1 cup steel cut oats (also known as Irish oatmeal or Scotch oats)

½ cup dried tart cherries

2 teaspoon finely shredded tangerine peel or orange peel

¼ teaspoon ground cinnamon

1/8 teaspoon salt

1 tablespoon brown sugar or honey (optional)

Dash ground nutmeg

1-1/2 cups lowfat milk

1/2 cup Cheribundi Tru Cherry, Ginger Cherry or Skinny Cherry juice

2 tablespoons butter

Optional toppings:

Milk, warmed (optional)

Fruit-only preserves

¼ cup hazelnuts, pecans, almonds, or walnuts, toasted and chopped

 Method of Preparation:

Combine oats, cherries, citrus peel, cinnamon, salt, and nutmeg in a medium saucepan then stir in milk and cherry juice.  Heat just to boiling; reduce heat. Simmer, uncovered, for 10 minutes or until oatmeal is done, stirring occasionally. Remove from heat and stir in butter. If desired, add additional milk to make desired consistency. Spoon into 4 bowls and serve sweeteners, nuts., and preserves on the side.
